Quick and Easy Yogurt Parfait

My latest yogurt obsession is Siggi’s dairy products. I’ve been searching for a yogurt that actually tastes good and doesn’t have a ton of sugar, artificial sweeteners and preservatives. It actually has more protein than sugar which is next to impossible to find! Another cool thing is that Siggi developed his product in his own kitchen using his mother’s skyr recipe. During my dietetic internship I was fortunate to be able to go to a conference where Siggi himself presented. We heard how he came up with the idea for this and his process of building this great company. This is a picture of my friends and I meeting him. 🙂 [nutrition nerds]

Below is my go-to yogurt recipe. It’s super quick and easy but is a great source of protein(yogurt), carbohydrate(berries) and healthy fat (almonds)! If I’m planning on eating them as a breakfast I pour the berries into a bowl to thaw overnight, otherwise I’ll add them frozen. Want a balanced snack instead? A mason jar like the one I used (8oz) works great!


Yogurt Parfait

Ingredients:

Pour yogurt into mason jar or bowl. Add frozen berries. Top with sliced almonds.

 


 

How easy was that?! Feel free to substitute frozen berries for fresh. I like the frozen because they’re easier to find in the winter months and as they thaw they add even more sweetness to the yogurt. Enjoy!
