Lentil Spaghetti Sauce

Ingredients
  • 1/2 cup onion chopped
  • 1 ea zucchini diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 1/2 cups dried green lentils
  • 4 cups vegetable broth
  • 1/2 tbsp pepper
  • 1 can Italian diced tomatoes (14.5 ounces)
  • 1 can tomato paste (6 ounces)
  • 1 tsp white vinegar
  • 1 1/2 tsp dried basil
  • 1 1/2 tsp dried oregano
Instructions
  1. Heat olive oil in a large sauce pan, sauté onion, garlic, zucchini until tender. Stir in the lentils, broth, and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until lentils are tender. 

  2. Stir in the tomatoes, tomato paste, vinegar, basil and oregano. Return to a boil. Reduce heat, cover and simmer for 40-45 minutes
