Homemade Granola

  • 1 cup shredded, unsweetened coconut
  • 1/2 cup sliced almonds
  • 1/2 cup chopped pecans
  • 1/2 cup raw pistachio meats
  • 3 tbsp chia seeds
  • 2 tbsp avocado oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 tbsp honey
  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper.

  2. Combine the coconut, nuts, seeds, and salt in a large bowl. Add the coconut oil, honey, and vanilla and mix until the nuts and seeds are evenly coated.

  3. Spread across the baking sheet and bake for 12-15 minutes or until the coconut is golden brown.
