Protein Pancakes

The perfect whole grain and high protein pancake. Top with berries or even sautéed cinnamon sugar apples for a delicious breakfast!

  • 2 ea eggs
  • 1/4 cup unsweetened vanilla almond milk
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups old fashioned rolled oats
  • 2 scoops unflavored collagen peptides We use Vital Proteins
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • cooking spray
  1. In a food processor blend all ingredients until smooth. Allow to thicken. 

  2. Heat a nonstick skillet over medium heat and spray with cooking spray. Pour pancake batter onto hot skillet. Allow to cook for approximately 2 minutes (or until bubbles start to appear on the top). Flip the pancake and allow to cook for 30 additional seconds. Continue with remaining batter.

  3. Serve with diced cinnamon apples or frozen berries.
