Blueberry Almond Cashew Bars

  • 2 cups cashews
  • 1 cup cashew butter
  • 2 tbsp hemp hearts
  • 2 tbsp unsweetened flaked coconut
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup dried blueberries
  • 1/2 cup dates, pitted
  • 1 cup almonds
  1. Line a baking sheet with parchment paper

  2. In a food processor, combine the cashews, cashew butter, hemp hearts, flaked coconut, vanilla extract and cinnamon. Pulse until well combined. Pour the mixture into the baking sheet and press evenly across the sheet. (about 1/4 inch thick.

  3. In the same food processor, add the blueberries, dates and almonds. Pulse until combined.

  4. Pour the blueberry mixture on top of the cashew mixture. Firmly push the blueberry mixture towards the edges, covering the cashew mixture.

  5. Chill in the freezer for 4 hours. Cut into small bars.
