Southwest Quinoa Salad

Ingredients
  • 1 cup quinoa cooked
  • 1/4 cup olive oil
  • 1 lime juiced
  • 1/2 tsp lime zest
  • 1 tsp salt
  • 2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 1 15 oz can black beans
  • 1/2 cup corn
  • 3/4 cup pico de gallo, drained
  • 1 tbsp parsley chopped
  • salt and black pepper to taste
Instructions
  1. In a small bowl, whisk together the oil, lime juice and zest, 1 tsp salt, cumin, and pepper flakes until combined. 

  2. In a large bowl, add the cooled quinoa, beans, corn, pico de gallo, parsley and mix together.

  3. Pour the dressing over and toss to coat. Season with salt and pepper to taste.
