The perfect side dish
Bring a large pot of water to a boil. Meanwhile, fill a large bowl with cold water and a cup of ice cubes.
Add a pinch of salt to boiling water and add broccoli. Boil 30 seconds. Drain and transfer to ice water to stop cooking. Allow to cool for 2-3 minutes.
Transfer broccoli to paper towel to dry
Add finely chopped red onion to a small bowl of cold water and let sit 5 minutes. This helps take the "bite" out of the raw onion
In a small mixing bowl, combine dressing ingredients and whisk until smooth
In a large bowl combine broccoli, bacon, onion, cranberries, almonds and cheddar. Toss with dressing. Cover and refrigerate 60 minutes.
