Grilled Baby Eggplant
Ingredients
  • 1 1/2 pounds baby eggplant halved
  • 3 tbsp extra-virgin olive oil
  • 3/4 tsp salt
  • 3/4 tsp pepper
  • 1/2 tsp crushed red pepper
Instructions

  1. Preheat grill to medium-high. Brush eggplant with oil and sprinkle with salt, pepper and red pepper flakes. 

  2. Grill the eggplant, turning once, until softened and lightly charred, 6 to 10 minutes.
