Spinach, Quinoa and Cannellini Bean Slow Cooker Soup
Ingredients
1 eayellow oniondiced
2 eacarrotschopped
2eacelery stalkschopped
3 eacloves garlic
7-8cupslow sodium vegetable broth
1/2cupuncooked quinoa
215oz canslow-sodium cannelloni beansdrained
1bagbaby spinachlarge
2tspsalt-free Italian seasoning
Instructions
Place all ingredients other than spinach in a 6 quart slow cooker and place on low for 6-8 hours. Right before ready to serve, add spinach and stir until spinach is wilted.
