In a bowl whisk together chia seeds, milk, pumpkin, maple syrup, pumpkin pie spice, vanilla and salt.
Let mixture soak 5 minutes. Give it another stir to break up any clumps and pour into a container (we like to use mason jars)
Cover and refrigerate for at least 3 hours or overnight.
When you're ready to enjoy, top with a sprinkle of cinnamon and chopped pecans. Store in an airtight container for up to 3 days.
