A lighter twist on a holiday classic
Preheat oven to 350 degrees F
In a food processor combine the oats, pecans, coconut oil, maple syrup and salt
Distribute mixture evenly among 8 tartlet pans (about 3" in diameter)and press down firmly with fingers
Place pans in the oven and bake for 7-10 minutes or until golden brown. Remove from oven and let cool.
In a food processor mix together the dates, milk, vanilla and salt until creamy and smooth.
Remove each "pie" from its pan by gently squeezing the sides of the pan. Use a knife to spread the date mixture onto each "pie" and top with a sprinkle of chopped pecans
