When it comes to meal prepping - I don't love the typical cook once and eat all week meals. I prefer to prep "bowls" instead.
Add chopped veggies and olives to a large bowl, cover and place in fridge
Prepare chicken and store in airtight container in fridge
Assemble bowls by distributing 1 cup riced cauliflower and 1/4 prepared chicken into bowl and microwaving until warm. Season with salt and pepper.
Add chopped veggies, drizzle with 1/4 greek dressing. Garnish with Tzatziki sauce, Hummus and/or a lemon wedge.
