Add water to a large saucepan over medium heat. Stir in the oats, quinoa and salt. Cook uncovered until the grains are tender and the water has evaporated, 20-25 minutes.
Remove from the heat. Stir in the coconut milk, chia seeds, honey and vanilla. Taste and add additional sweetener if desired. Allow to cool, then pour into 6 separate containers. Mason jars work well for this recipe.
At the time of serving top with sliced strawberries, almonds and shredded coconut.
