Perfect paired with brown rice for a complete weeknight meal!
Heat 1 tbsp oil in a skillet over medium-high heat
When oil is hot, add chopped sausage and cook until slightly browned. Remove from pan and set aside.
Reduce heat to medium and add remaining 1 tbsp oil. Add zucchini, onion and bell pepper. Sprinkle with seasonings.
Let cook until the onion is translucent and zucchini and peppers are near tender, about 5 minutes.
Add sausage back into the skillet and combine.
