Preheat oven to 400 degrees F and bring a large pot of water to a boil
Slice each zucchini in half lengthwise and remove the seeds by using a melon baller or by sliding a spoon down the length of the zucchini. Drop sliced zucchini in boiling water and boil for 1 minute.
Prepare a large baking dish by evenly spreading salsa along bottom. When zucchini halves are finished - drain water and place each, skin side down into the baking dish.
Meanwhile, in a skillet with olive oil, brown the ground turkey. When no longer pink add seasonings along with 1/4 cup water. Sauté until combined.
Add in diced bell pepper, onion and black beans. Stir.
Stir in tomato sauce and allow to simmer for 15 minutes.
Scoop 1/4-1/3 cup of mixture into each "boat". Top with cheese and bake in oven for 20 minutes.
