Don’t get me wrong, I love breakfast, but there are some mornings where I just don’t feel like putting something together. I like to put together breakfasts that can be prepared ahead of time so I can grab it as I run out the door. This baked oatmeal recipe is great for those busy/lazy winter mornings!
I like to prepare and bake the recipe on Sunday and then portion it into Tupperware containers for the week. I’ll either top it with a little extra milk, Greek Yogurt or pair it with a hard-boiled egg on the side for some extra protein.
Fresh fruit is hard to come by in the winter which is why I used frozen fruit. Frozen fruits (especially berries) tend to add a bit more flavor when they thaw into the recipe. This will make the recipe more sweet for those who don’t enjoy the taste of plain oatmeal
