Chinese food is another one of those comfort foods we tend to gravitate towards during times of stress or cravings. Unfortunately the high fat and sodium content of the popular picks make it less than ideal for a regular dinner choice.
This “fried rice” is made with cauliflower florets instead of rice and absorb the Asian flavors of the sauce just as well. Cauliflower is a cruciferous vegetable like broccoli. It’s high phytonutrient and antioxidant content can improve function of several systems in our body including our cardiovascular, digestive, and immune systems. It can also be preventative of certain cancers.
I’ll admit, I cheated a little on this recipe… I had some rotisserie chicken breasts left over from another recipe so I used those instead of cooking raw chicken. I found this a little easier and saved a few minutes. I also found these Green Giant cauliflower medley packets in the frozen foods section. With its only ingredients being cauliflower, peas, carrots, onion, and green onion, I had to try it!
I was so glad I did! The cauliflower medley made this recipe even easier to use. The whole thing took me about 15 minutes to prepare. Perfect for a busy weeknight meal. Try it and let me know what you think! 🙂
