Last week’s dinner of choice was meatloaf, smashed baby potatoes, and green beans. We decided to try an interesting take on the traditional ‘loaf’ and make mini meatloaves.
The assembly was very simple. Just put the ground turkey (I used 93% lean), oats, onion, bell pepper, tomato sauce, egg whites, salt and pepper into a bowl and combine. Divide the mixture among the 12 reservoirs of the muffin tin and top with ketchup. Bake for 30-35 minutes at 400 degrees or until the ground turkey is cooked through.
One of the main changes I made to the traditional meatloaf recipe was using ground turkey rather than ground beef. This can be a good alternative for those choosing to avoid red meat. Be careful when selecting ground poultry though, some can contain just as much fat as ground beef. Look for a 90% + lean option. I also added some orange bell pepper to sneak in a veggie. 🙂
And finally they come out as adorable mini meatloaves! We paired ours with homemade smashed potatoes (boiled baby potatoes, drained the water, smashed them with a potato masher with a little bit of salt, pepper, and skim milk), and green beans.
